Chicken Parm epic win!

Last night I arrived at the boy’s house and he was at work, so I talked with Kate and MJ and we were like what are we doing for dinner? I said I’d cook and that I could cook chicken parm. It turned out wonderful! So I’m sharing the recipe:

Heat oven 360*

1 can diced tomatos

1 white onion

1 sweet red onion

around 2.5 cups of sliced mushrooms

shredded mozzarella cheese (three handfulls for the top)

shredded cheddar cheese.

2 small cans pizza sauce or 1 large can pizza sauce

rose mary

Italian seasoning

garlic

Noodles of choice. I used spiral noodles last night

Spray baking pan with Pam. Season the chicken breast and put them in the glass baking pan. Throw a few handfuls of the shredded cheese on top of the chicken, and set aside. In a large pot cook the pizza sauce, mushrooms  onions (chopped), diced tomatos, garlic, rosemary, and Italian seasonings. Stir well and let simmer. Once done pour over the chicken and add several more handfuls of shredded cheddar cheese and put in the oven. Once the chicken is actually cooked throw a few more handfuls of shredded mozzarella cheese on top and bake until the cheese is browned.

In a spagetti pot, or at least a large pot boil water, salt and noodles and stir. Check by tasting to see if the noodles are done but not mushy. Once noodles are done drain and place small portion of noodles on the plate or bowl and scoop chicken over it with added sauce to taste. Serve with garlic bread (optional)
